Anguilla is known at the “Culinary Capital of the Caribbean.” Here, eating is an experience that begins with Chef Thevenet’s breakfast spread in the morning, and continues all day with locally sourced ingredients and seafood delivered fresh to our door.
Indulge in the flavors of the island at JULIANS, our five-star restaurant, and taste wines from around the world in our award-winning Q Wine Cellar. Enjoy lunch surrounded by lush tropical foliage on the grand patio, have a craft cocktail at the Q Bistro Bar or a gourmet meal delivered to your suite.
All of our cuisine is available to our guests around the clock, with personalized room service whenever the craving strikes. We are here to serve you.
Welcome to JULIANS—A Tropical French Bistro. Here, Chef Dominique Thevenet offers his blend of fresh tropical flavors fused with classic techniques, a unique style we like to call “island soul food.”
Join us in our elegant dining room for lunch or dinner. It is our goal to provide our guests with the finest dining experience on the island.
Start your meal with Grand Mansion gazpacho and share some Burgundy escargot. For an entree, choose local favorites like spicy crayfish fritter or conch stuffed chicken breast, or a traditional French specialty like rosemary roasted lamb loin or champagne scallops. Finish with fruit and champagne, or chocolate pepper cake served with raspberry sorbet.
A range of gourmet salads, the chef’s special Q Lasagne and vegetarian dishes are always available.
As a Relais & Châteaux property we believe that food is a delicious solution for protecting our environment, respecting the hard work of our artisan producers, and acting for climate change.

Our wine cellar has been recognized as one of the best in the world with Wine Spectator’s Award of Excellence. It is unrivaled in the Caribbean, offering guests an astonishing selection that has taken a lifetime to collect.
Owner Geoffrey Fieger has spared no expense in creating The Q Cellar. Handcrafted in stone, brick, and cedar wine racks, the cellar is designed in a Tuscan style, with a barrel-vault ceiling. Over 1,600 bottles of wine are protected with state-of-the-art temperature and humidity controls.
A tour through our cellar is like a visit to an art gallery, with Geoffrey Fieger’s Private Collection appealing to the most sophisticated oenophile.
As part of the Quintessence ultra-luxury experience, our guests are invited to intimate tastings in The Q Cellar, hosted by our esteemed Sommelier Albert Lake, who will help you find the best pairings to complement Chef Dominique’s cuisine.

Dominique worked in five-star hotels in France, Egypt, Yemen, Gabon, and Senegal before moving to Anguilla 30 years ago. He has worked in many of the island’s finest restaurants before opening his own, the much-acclaimed Café de Paris.
Quintessence Hotel is delighted to have Chef Dominique bring his experience and vision to our guests – fusing organic Caribbean and delicious local cuisine with a French touch.
